Early February is one of the coldest times of the year, but by the end of the month, most places are already seeing signs of spring. Or at least that the sun may shine again someday…it’s tricky.
But for home canners, it’s a time to catch up on their pantry staples before the garden season begins again.
Some things, like chili and pot roast, can be canned any time of year so that they’re cooked and ready to eat at a moment’s notice. The same goes for meat canning recipes, soups, stews, and meal-in-a-jar recipes.
Beyond that, there are a few things that are harvested or fresh in February, namely citrus fruits.

Putting up plain veggies means quick, versatile meals later on, and while pickings are slim in February, you can still put up root crops and spuds that just won’t store all winter without a root cellar.

You can pickle almost anything, and that includes late-season February produce!

Thank you for all the canning ideas. It has helped to create a pantry that allows me to can and save. can I can fresh eggs. We have a small homestead with 60 chickens and would like to figure out how to save for winter when they don't lay as many.
