Winter is when I find myself most grateful for a well-stocked pantry. There’s nothing quite like pulling a jar of homemade soup off the shelf, heating it up, and having dinner ready in minutes—especially when the wood stove is going and the snow’s still falling outside.

These winter soup recipes are all pressure canning recipes, and they’re filled with hearty ingredients like beans, squash, potatoes, and root vegetables—perfect for the deep freeze of January. This collection is brilliant. Breaking the recipes into categories makes it way easier to find what sounds good vs scrolling thru everything. The Nordic salmon soup sounds particualrly interesting, dunno if I've ever had Finnish-style soup before but root veggies + salmon in light broth seems like a totally different direction from the usual heavy chowders.
